Bell Pepper and Chicken "Nachos"
Hey Everyone!
This recipe is super easy, it can even be started before you go about your day in the slow cooker, and finished when you get home!
Ingredients:
*2 Belll peppers (red,green,yellow)
*chicken
*1 onion
*1 can black beans rinsed
*Corn (frozen,canned,fresh)
*Cheese
*Avacado
*sour cream
*your favorite salsa
*Cumin
*Oregano
*Spanish Style Paprika
*Chili Powder
*Pepper
*Salt
*Red Pepper Flakes
Instructions:
put chicken in slow cooker on low, add 1c water, chili powder, cumin, oregano, red pepper flakes, salt, pepper, paprika to taste. Leave until chicken is done, about 4-6 hours. Or you can pan fry the chicken to make things faster.
After chicken is done, shred it. Sautee the onions until almost golden.
Mix in bowl: chicken, onions, corn, black beans, and a little salsa to make it all stick together.
Cut the top off the peppers, then slice them in half from top to bottom.
Fill the halves with the chicken mixture, sprinkle cheese on top.
Broil in oven on Low until the cheese is golden.
(if you want your peppers to not be crunchy and fresh pepper like, boil them before hand partially then cut, stuff, and bake them at 325 until the cheese is golden.)
Then you can add toppings such as sour cream (we used Greek Gods Greek Sour cream) and avacado!
